The company combines 100% Paraguayan raw materials with Italian craftsmanship and is considered a pioneer in unsmoked, air-dried sausages in the country.
The company was founded by Marco Musu, an Italian from Sardinia, and his Paraguayan wife Laura. After years abroad, they chose Paraguay as the location to realise their vision of high-quality, traditional chacinados. The name ‘Quattro Mori’ refers to the coat of arms of Sardinia, which features four Moorish heads.
Quattro Mori produces a wide range of air-dried products, including:
Salame Sardo (aged for 50 days)
Salame Milano
Bondiola, Lomo, Panceta, Guanciale
Bresáola (made from beef, a tribute to Paraguay's high-quality cattle breeding)
In addition:
Mortadella refined with pistachios or pepper and made from 100% natural meat.
Special attention is paid to natural casings, which ensure better maturation, texture and authentic flavour. Production takes place in climate-controlled maturation chambers in Villa Elisa to compensate for the humid Paraguayan environment.
